I Have Been Eating Like a King During the Pandemic

I can say that I have consumed more than the average amount of food than I usually do and I am not talking about the “Quarantine 15” nor I’m feeling stressed about the whole thing. It’s just the way I have changed my routine with eating. It hasn’t been just junk food, soda, and other unhealthy options but have been trying to maintain a healthy intake while being at home. In fact, I feel like I am eating more healthier than ever before.

With breakfast being “the most important meal of the day”, I start the day off with more than just a few pieces of toast now. Breakfast has ranged from pancakes, stuffed omelets with ham or bacon, traditional scrambled eggs and some chilled pineapple pieces to throw in as a fruit on the side. I don’t have all this everyday but more often than I used to on a normal day. Sometimes I just have a mini bagel or English muffin with butter if I am not in the mood for something more substantial.

Lunch usually consists of a ham and cheese sandwich toasted with an orange and a few potato chips. But I usually don’t have the chips and just have an orange. If there even leftovers from dinner the night before then I would have that instead. Sometimes I skip lunch depending on how much of a breakfast I have.

Then dinner which has been my favorite meal during this whole pandemic. I have had a lot of baked chicken breast and chicken drumsticks in barbeque sauce but then of course with sides of veggies like broccoli, carrots, mashed potatoes and corn. The mashed potatoes go excellent with beef like sirloin steaks which I have certainly had my fill of. Then when the holidays rolled around, it just got even better. A turkey with all the fixings with beans and rice for Thanksgiving. Then a large ham dinner with tons of veggies for Christmas. I made sure I saved room for dessert that consisted of pumpkin pie, vanilla cake and ice cream.

I can say that I have treated myself here and there with some desserts but not frequently. When there is a sports game on or my favorite show, I do grab a snack occasionally but try to be more on the healthy side like a veggie tray with onion dip. Then if I am even more nice to myself, I get takeout like Chinese food, pizza, or whatever I am craving. I have tried to limit takeout as much as possible because while at home, I am looking to explore many other different and more healthy options.

During these challenging times I have been able to expand my horizons and try new things like sautéed broccoli rabe with garlic. It is so delicious and has a good bitter taste. I highly recommend it if your looking to try some new things yourself. I simply can not get enough of it and is a great appetizer before having any type of meat or with meat. Another meal I tried, is a bacon cheeseburger with caramelized onions. I have ate burgers before but not to this extent. Bacon goes good with just about everything, ( It seriously does). Being first introduced to caramelized onions really changed me and I even have them on the side.

Fortunately while writing this I have had a full stomach because with an empty stomach I wouldn’t have been able to write this.

I definitely recommend everyone to try something new while being at home and to those not knowing what to eat.
